Ingredients

  • Chocolate Cookie Candy Crust

  • 24-oz cream cheese

  • 1/3 cup dark brown sugar

  • 1/4 cup dark corn syrup

  • 5 tsp cornstarch

  • 3 eggs

  • 1 egg yolk

  • 1 cup milk chocolate chips, melted

  • 1/3 cup whipping cream

  • 2 tsp vanilla

  • 1 cup M&M’s

  • Creamy Chocolate Frosting

Directions

  • Ingredients above are for the cheesecake filling. Below are the recipes for the crust and topping frosting. Make the crust first and the frosting last.

  • Preheat oven to 350°F.

  • In a large bowl add the cream cheese, dark brown sugar, dark corn syrup, and cornstarch. Beat until smooth.

  • Add eggs and egg yolk, one at a time, beating well after each addition.

  • Stir in melted chocolate, whipping cream, and vanilla.

  • Stir in M&M pieces.

  • Pour over crust.

  • Bake at 350° for 15 minutes.

  • Lower oven temperature to 200°F, bake for 1.5 hours or longer, or until center no longer looks wet and shiny.

  • Remove from oven, run a knife around the edge of pan and crust.

  • Chill, uncovered, overnight.

  • Add creamy chocolate frosting and serve.

Notes

  • When baking at 200°F, 2 hours or 2.5 hours seems to work well.

Chocolate Cookie Candy Crust

Ingredients

  • 11 Oreos, crushed

  • 1/4 cup M&M’s, copped

  • 3 tbsp butter

Directions

  • In a small bowl, stir together crushed cookies and chopped candy.

  • Stir in melted butter until combined.

  • Press mixture evenly onto the bottom of a greased spring-formed pan (pie pan).

Creamy Chocolate Frosting

Ingredients

  • 3 tbsp butter

  • 2 cups sifted powdered sugar

  • 1/4 cup unsweetened cocoa powder

  • 1 tsp vanilla

  • 1 tsp milk (or 1/4 cup)

  • M&M’s to decorate

Directions

  • Beat butter until smooth.

  • Gradually add 1 cup powdered sugar and the cocoa powder, mixing/beating well.

  • Slowly mix/beat in vanilla and milk.

  • Add remaining powdered sugar and mix/beat until smooth.

  • Spread over cheesecake or other dish. Garnish with M&M’s. Chill until serving time.

Notes

  • Add a little more milk if necessary for better spreading consistency. Can be added after all ingredients are mixed together.
