Chocolate Mousse
Original recipe from The Seasoned Chef.
Ingredients
8 oz bittersweet chocolate
6 Tbsp butter, in small cubes
4 eggs (room temperature, separated)
1/4 cup sugar
1 cup heavy whipping cream
1/2 tsp vanilla extract
Directions
Put butter, cut into cubes, with the chocolate broken into smaller pieces into a mixing bowl.
Place over a double boiler and melt mixture while occasionally stirring.
Allow to cool for a bit while stirring.
Then add the egg yolks, incorporated one at a time.
Add egg whites to a mixing bowl and whip until soft peaks form.
Add sugar and continue to whip until stiff peaks.
Sacrifice some of the whipped whites by incorporating into chocolate mix using the whisk.
Then add the rest of the whites and fold into the mixture.
Add vanilla extract to cream and whip until soft peaks form.
Fold cream into mixture and serve.
