Chocolate Mousse

Ingredients

  • 8 oz bittersweet chocolate

  • 6 Tbsp butter, in small cubes

  • 4 eggs (room temperature, separated)

  • 1/4 cup sugar

  • 1 cup heavy whipping cream

  • 1/2 tsp vanilla extract

Directions

  • Put butter, cut into cubes, with the chocolate broken into smaller pieces into a mixing bowl.

  • Place over a double boiler and melt mixture while occasionally stirring.

  • Allow to cool for a bit while stirring.

  • Then add the egg yolks, incorporated one at a time.

  • Add egg whites to a mixing bowl and whip until soft peaks form.

  • Add sugar and continue to whip until stiff peaks.

  • Sacrifice some of the whipped whites by incorporating into chocolate mix using the whisk.

  • Then add the rest of the whites and fold into the mixture.

  • Add vanilla extract to cream and whip until soft peaks form.

  • Fold cream into mixture and serve.
