Algerian Couscous Sauce

Ingredients

  • 3 tbsp olive oil

  • 2 onions chopped

  • 1 can diced tomatoes

  • 2 carrots (sliced)

  • 2 tsp salt

  • 2 tsp black pepper

  • 1 tsp mixed spices

  • 1/2 tsp cumin

  • 5 cups water

  • 2 potatoes (sliced)

  • 1 can chick peas

  • 2 ladles of sauce from Algerian Chicken

Directions

  • In a pot, combine the olive oil, onions, tomatoes, carrots, salt, pepper, mixed spice, and cumin. Bring to a boil.

  • Add potatoes. Cook for 20 minutes.

  • Add chick peas. Cook 5-10 minutes.

  • Serve on plain couscous (cooked separately) with Algerian Chicken or lamb.
